Chocolate Coconut Protein Muffins

Want to try these awesome tasting protein muffins, packed with flavor and healthy ingredients.  Low Sugar and great taste.

Ingredients:

1 Scoop Chocolate Protein Powder

4 tbsp. Unsweetened Regular or Dark Chocolate Cocoa Powder

4 tbsp. Ground Flaxseed

1 Whole Egg

4 Egg Whites

1/2 Cup Canned Pumpkin

2 tbsp. Coconut Oil

6 Packets Stevia or 3 tsp. liquid Stevia

1 tsp. Baking Powder

Dash of Coconut Extract (optional)

Directions:

  1. Pre-Heat Oven to 350 degrees.
  2. Mix all ingredients with a hand held electric mixer.
  3. Spoon into lined muffin tins
  4. Bake for about 20 minutes.
